5 ingredients and 20 prep minutes are all you need to whip up this summer fridge Yoghurt Tart! Switch the flavours up and use strawberry yoghurt and jelly to make a very berry treat or use Vanilla yoghurt and pear jelly for an “ultra posh” flavour combination. Directions

  1. Lightly grease a 23cm loose bottom tart pan.
  2. Crush the biscuits to a crumb texture in a bag using a rolling pin and combine with melted butter.
  3. Place the butter-biscuit mixture into the prepared tart pan. Using the back and side of a glass, press the biscuit crumbs into the bottom and sides of the pan. Refrigerate the biscuit base while you make the filling.
  4. Dissolve the jelly crystals in the hot water and set aside.
  5. In a mixing bowl, mix the yoghurt and condensed milk together until well combined, then gradually mix the jelly into it. Mix well and pour into the biscuit lined tart pan.
  6. Place the tart in the fridge and allow it to set for about 2 hours. When removing the tart from the tray wipe the outer sides of the pan will a warm cloth to slightly loosed the edges.
  7. Slice and serve with passion fruit pulp for an extra punch of flavour!
