Drain the defrosted calamari and pat dry with a paper towel and set aside.
In a bowl, add both flours, paprika, dried chili flakes, and 1 teaspoon salt and mix well. Split this mixture into two bowls.
Beat the eggs and set aside.
Dredge each piece in the flour mix, shaking off any excess, then into the eggs, shaking off the excess, then back into the second bowl of flour mix. Repeat this process with all the calamari.
Fry the calamari in batches for about 2-3 minutes, until golden brown. Then drain on a paper towel and immediately season the calamari generously with salt and pepper.
Serve with the garlic mayo dip and a squeeze of lemon juice.
